Reservations Extras & Taxes

Please can we have the ability to add extras per reservation within the reservation rather than choosing them from a list.
Each booking I have is different and I don't want to have a list to pick from and then for it to show on the reservation as now selected but still visible.
Also I want the taxes to be added separately rather than calculate all the extras as some of my extras DO NOt have taxes applied.

Regarding adding extras per reservation, we're not sure what you mean, sorry. Can you please clarify?
